About The Experience
🦬 We're not some fancy members-only club - we're a community of folks who love great food and want to connect with the stories behind it. Our dinners are an immersive experience, celebrating the intertwining stories of food, farmers, and cuisine. Each pop-up dinner is held on a beautiful farm, beginning with an exclusive farm tour that unfolds the narrative of the local bounty.
Throughout the tour, our expert chefs curate thoughtful pairings of locally sourced food and drink, seamlessly weaving together the flavors of the land.
About The Chef
🦬 While growing up in Southern California, Taylor Stark spent years learning how to cook himself dinner. That sense of independence pushed him towards a career in the kitchen. At the age of 20, he moved to Portland, Oregon and landed a job at Pan-Asian eatery Departure, where Chef Gregory Gourdet taught Stark how to run a kitchen with respect, care, and dedication. Stark moved to Denver in 2017 in order to open Departure’s second location as chef de cuisine. He was on the path to opening a new Sage Hospitality restaurant in 2020, but when the COVID-19 pandemic hit, they were forced to abandon the project.Â
In search of a new team that aligned with his ethos, Stark connected with Rising Stars alum Kelly Whitaker of id est hospitality group. With a shared love for local produce and an emphasis on promoting healthy working conditions, Whitaker brought Stark on as chef de cuisine of his farm-to-table, tasting menu restaurant, The Wolf’s Tailor. Stark’s menu focuses on intense usage of chiles and acid, often amplified by the built-in kushiyaki grill. Dishes like his honey-tamari-glazed guinea hen served with black rice and house-made gochujang are indicative of Stark’s goal to not fall into any traps of convenience.
About The Venue
🦬 Rock River Ranches was started by the four Moore brothers in 2010.  Today is it is owned and operated by Rex & Julie Moore and their two sons. We supply Colorado’s finest local bison to local Colorado restaurants and now direct to the consumer.  We have our own Bison herds in Wray, Hudson, and Hartsel CO as well as Lusk WY and our cold storage warehouse in Commerce City, CO.  Most of our bison are naturally raised in Colorado and a few are from the surrounding states.  They are harvested in small groups of 10-14 bison every 2 to 4 weeks so fresh chilled bison is always available.

Five-course meal served family-style. Each dish is thoughtfully prepared to showcase the finest produce from local farms, perfectly complemented by our succulent bison sourced from the ranch

🦬 Ticket prices include two food/drink pairing during the farm tour, a five-course family-style dinner, wine pairings and water
🦬 Tickets are only available to ages 21+
🦬 Due to the family-style nature of our meals and to uphold the highest quality standards, we can not accommodate any dietary restriction requests.
🦬 This event is held on a working farm, please dress accordingly including if there is a possibility of inclement weather. In the case of inclement weather, if possible we will still hold the event, and if it is deemed unsuitable to host the event, we reserve the right to postpone to a future date.
